Pineapple Upside-down Cake

Ingredients
115g butter
200g dark brown sugar
450g canned pineapple slices, drained
4 eggs, separated
Grated rind of 1 lemon
Pinch of salt
115g castor sugar
75g plain flour
5ml baking powder
Preheat the oven to 180c/350F/gas mark 4. Melt the butter in a 25cm cast iron frying pan. Reserve 15ml of the melted butter. Add the brown sugar to the pan and stir in until blended. Place the pineapple on top in one layer and set aside. Whisk together the egg yolks, reserved butter, and lemon rind until blended well. Set aside. Beat the egg whites with the salt until stiff peaks can be formed. Gradually fold in the castor sugar, then the egg yolk mixture. Sift the flour and baking powder together. Carefully fold into the egg mixture in a three stage process until the entire amount has been incorporated. Pour the mixture over the pineapple. Bake until a skewer inserted in the centre comes out clean. This should take around 30 minutes. While still hot, invert on a serving plate. Serve hot or serve cold.
Pineapple Refrigerator Dessert Recipe
This recipe originates from Canada and is a very indulgent and simple pineapple dessert recipe to keep in your refrigerator for tasty snacks. It is one that once you have tried it, you will be making time and time again.
Ingredients
one packet of unflavored gelatin
one tin crushed pineapple, drained (keep the syrup)
500ml heavy cream
40 graham crackers
50g finely chopped crystallized ginger
Soften gelatin in 125ml pineapple syrup in a saucepan. Stir until gelatin is dissolved. Blend this mixture into the crushed pineapple. Chill the mixture until it is slightly thickened, stirring it occasionally. Fold half of the whipped cream into the chilled gelatin mixture until it is evenly blended. Spread a thin layer of the gelatin mixture on each graham cracker. Turn the graham crackers on end and press firmly together to form a loaf.Spread with the remaining whipped cream and garnish with ginger. Chill for about 3 hours.
